Praline is a form of confection containing, at a minimum, culinary nuts – usually almonds, pecans and hazelnuts – and sugar. Cream is a common third ingredient. There are two main types: French pralines, a firm combination of almonds and caramelized sugar. American pralines, a softer, creamier combination of syrup and pecans, hazelnuts or almonds with milk or cream, resembling fudge. A praline cookie is a chocolate biscuit containing ground nuts. Praline is usually used as a filling in chocolates or other sweets. The word praliné is used colloquially in France and Switzerland to refer to these various centres coated with chocolate, known simply as “chocolates” in English.
Pralines are brittle and hard and difficult to cut. Ultrasonic provides a quality of cut that cannot be achieved using traditional slicing methods on these types of products. Foods containing items such as vegetables, meats, nuts, berries and fruits can be cut without deformation or displacement of the internal product. The low-friction condition also reduces product sticking to the cutting tools, resulting in more consistent cuts and less down time for cleaning. And because of the advanced process control that is available in ultrasonic generators, cutting performance can be manipulated by adjusting the equipment parameters. The gentle ultrasonic slicing action reduces product deformation and maintains product integrity, thus reducing yield loss and improving presentation and profitability.
