Ultrasonic Slicer for the Food-industry
Ultrasonic Slicer for the Food-industry – Cheersonic
1. Working Principle
Ultrasonic Vibration System: The core of an ultrasonic slicer is the ultrasonic vibration system. It primarily consists of an ultrasonic generator, a transducer, and an horn. The ultrasonic generator converts ordinary electrical energy into a high-frequency AC signal, typically between 20kHz and 100kHz. This high-frequency AC signal is transmitted to the transducer, which converts the electrical energy into mechanical vibration energy based on the piezoelectric effect. The horn then adjusts the vibration amplitude, focusing the vibration energy and transmitting it to the cutting blade.
Cutting Process: When the high-frequency vibrating blade contacts the material being cut, intense vibrations are generated at the interface between the blade and the material. This vibration instantly energizes the material’s molecules, weakening the intermolecular bonds. For slicing, this high-frequency vibration allows the material to be cut with minimal resistance. This cutting method utilizes changes in the material’s internal microstructure rather than relying on traditional brute force or friction.

2. Primary Applications in the Food Industry
Soft and Delicate Products:
- Cakes: Cheesecakes, sponge cakes, mousse cakes, tiramisu.
- Soft Cheeses: Goat cheese, brie, camembert, blue cheese, fresh mozzarella.
- Processed Foods: Lasagnas, ready-meal layers, quiches.
Sticky and Gummy Products:
- Confectionery: Fruit gums, marshmallows, caramel blocks, licorice, marzipan.
- Energy & Cereal Bars: Prevents the sticky layers from clinging to the blade.
- Dates and Fig Bars.
Multi-Layered & Composite Products:
- Products with Wrappers: Slicing through products without damaging the internal wrapper (e.g., cereal bars).
- Layered Desserts: Cutting cleanly through different layers like crust, filling, and topping simultaneously.
Aerated Products:
- Bread & Cake with inclusions: Reduces crumbling in high-value baked goods.
- Foams and Mousses.
Precision Slicing:
- High-Value Ingredients: Truffles, smoked salmon, premium charcuterie where every gram counts and presentation is key.
About Cheersonic
Cheersonic manufactures the leading portioning equipment for bakeries producing fresh and frozen desserts. Since 1998 bakers have used Cheersonic machines to cut, slice and portion cheesecake, pie, layer cake, loaves, butter, cheese, pizza, sandwichs, and more. Cheersonic offers ultrasonic cutting solutions that support start-up bakeries and high production commercial facilities alike. Small standalone machines can be used in manual baking facilities and large inline robotic solutions aid in high speed production.
Cheersonic offers many ultrasonic slicing models, both inline and offline applications, with production speeds of 80 to 1,500 cakes or pies per hour.
Cheersonic’ latest offline introductions include ultrasonic cutting with or without divider inserts between each slice. This improves the quality of the cut and makes for a much better product presentation for the customer. In addition, robotic arm improves the speed, efficiency, and accuracy of the cutting process, producing professional looking products every time.
