Ultrasonic Fixed Weight Cheese Processing Production Line
This semi-automatic production line is designed specifically for processing circular and rectangular semi hard cheese blocks, using ultrasonic cutting technology to ensure accuracy, integrated multi head combination scales to ensure accurate weighing, and automated packaging to improve efficiency.
1. Manual feeding station
- Function: The operator manually places large cheese chunks (circular: diameter 300mm x height 100-170mm; rectangular: 500mm x 300mm x 100mm) onto the feeding conveyor. The operator can also remove the outer skin or packaging film as needed.
- Components:
*Stainless steel feeding conveyor belt: designed to be hygienic and easy to clean, equipped with low friction plastic or stainless steel belts.
*Safety grating: protects the operator’s hands and prevents entry into the cutting area.
2. Transport to the cutting machine
- Function: Transport cheese chunks to the cutting machine.
- Components:
*Guidance and positioning system (crucial for circular blocks): Adjustable guide rails are used to align and position circular and rectangular blocks, ensuring their consistent position under the cutter.
*Encoder/Position Sensor: Accurately track the position of the cheese block on the conveyor belt to trigger the cutting sequence at the right time.
3. Ultrasonic cutting machine (core unit)
- Function: Cut large chunks of cheese into multiple small pieces of pre-defined thickness. Weight control is not implemented at this stage, but is completed in the subsequent weighing and partitioning stages.
- Technology: Ultrasonic cutting uses a high-frequency (20-40 kHz) vibrating blade (welding head). This vibration can create clean, non stick incisions with minimal pressure, thereby reducing debris, product loss, and deformation.
- Dual format machine design:
*Cutting head: a vertically driven ultrasonic blade system.
*Dual blade function (recommended): The machine can be equipped with two sets of interchangeable blade sets:
-A long blade (approximately 500mm) is used to slice along a rectangular block 500mm in length.
-A radial/blade type blade is used to cut circular blocks.
*Adjustable cutting program: The operator selects the recipe for “circular” or “rectangular” cheese on the human-machine interface (HMI). This will set:
-Slice thickness: The calculated slice weight should be slightly heavier than the final target weight (for example, if the target is 200g, the slice may be 220g for subsequent trimming).
-Cutting sequence: For rectangular blocks, parallel cutting will be performed along a length of 500mm. For circular blocks, parallel cuts will be made along the diameter. - Output: A series of cheese slices (with slightly different weights due to natural density variations of the mother block) are discharged onto a conveyor belt and sent to a weighing machine.
4. Multi head combination scale and sorting system
- Function: This is a crucial stage in achieving a fixed weight distribution. It combines multiple slices to achieve precise target weights (e.g. 200g, 500g).
- Components:
*Allocate conveyor belt: Gently disperse the slices.
*Vibration type linear feeder: Import individual slices into the weighing hopper.
*Multi head combination scale (such as 14 heads): a series of independent weighing buckets. A high-speed computer continuously calculates the optimal combination of slices from each weighing bucket to make the total weight as close as possible to the target weight, while minimizing the excess weight (giveaway).
*Qualified/Unqualified Sorting Gate: Slices selected for combination are discharged to the packaging line. The unselected slices remain in the system waiting for the next combination. Fragments that do not meet the specifications can be removed to the rework bin.
This integrated production line provides an efficient, high-quality, and hygienic solution for converting large cheese chunks into accurately weighed, ready to sell consumer packaging.
