Ambert is a traditional farmhouse blue cheese that is softer and richer than most blue cheeses and is made with milk from low or alpine pastures. While the cheese matures in 40 days, for best quality it needs two to three months of cave ageing. , during the aging process, it infuses a sweet white wine. Ambert is cream with a distinct blue texture. The slightly tangy savory flavor from the bacterial infusion complements the unique flavors of butter and cream, so try the cheese as a snack on bread and fruit, or mash it into a salad.
