Chocolate Soufflé Recipe
Ingredients
Chocolate sauce: 500g chocolate, 250g animal cream
Soufflé filling: 1300g custard sauce, 200g chocolate sauce, 1000g egg whites, 300g sugar, appropriate amount of moisture-proof powdered sugar
Production method
1. Put the animal cream in a pot, boil over medium heat until boiling, then turn off the heat for later use.
2. After the chocolate is chopped, heat it in water until it is partially dissolved, pour the boiled animal cream into the mixture and mix well to make chocolate sauce.
3. Take 200g of the prepared chocolate sauce and mix well with the custard sauce.
4. Whisk the egg whites until wet and foamy, add sugar and mix well, then mix well with step 3.
5. Spread butter evenly on the inside of the soufflé baking cup (no butter is needed on the bottom of the baking cup), dip it in sugar, fill it with the ingredients in step 4, smooth it with a spatula, and then put it in the baking tray. Repeat the above steps until the ingredients are used up.
6. Add water to the baking tray to a height of 1/3 of the baking cup mold, put it into the preheated oven and bake at 230℃ for about 25-30 minutes. Take it out and sprinkle with moisture-proof sugar powder immediately.
