The English name of Moussaka is borrowed from Greek mousakás and other Balkan languages, which in turn are borrowed from Ottoman Turkish, which in turn is borrowed from Arabic muṣaqqa’a. The word Moussaka was first recognized in English as mùzàkkà in 1862. It is usually cooked in three layers, cooked separately and then combined for the final roast: the bottom layer is sliced eggplant sautéed in olive oil; the middle layer is minced lamb, chopped or mashed tomatoes, onion, garlic and spices; top with white sauce or savory custard. There are many variations of this basic recipe, sometimes without the sauce and sometimes with other vegetables.
