Provolone, cow’s-milk cheese from southern Italy. Provolone, like mozzarella, is a plastic curd cheese; the curd is mixed with heated whey and kneaded to a smooth, semisoft consistency, often molded into fanciful shapes such as pigs, fruits, or sausages. The brown, oily rind of provolone is wrapped in cords, which impress grooves in the rind, and hung to ripen. They are often seen on display in Italian food shops. The creamy yellow interior of provolone is smooth and pliable. Provolone contains high amounts of calcium and protein, but on the other hand, it is also high in sodium. The cheese goes along with full-bodied and aged red wines. At the table, it could be served with hot chutney, homemade bread and flatbread.

Ultrasonic cutting technology is a progressive industrial technique that uses high frequency vibrations to cut through materials with precision. Using the high frequency vibrations of the sonotrode (blade), we can drastically reduce the friction between the product and the blade, allowing for superior quality cuts, even when processing delicate, soft or crumbly products. Minimum offcuts and at the same time rapid, variable, accurate and neat cuts – with smooth cutting edges. The shape of the cut product will only be modified a little. Ultrasound designates sound waves, which are moving with a frequency of 16,000 Hz or more. At this, the unit Hz describes the number of vibrations in one second. During the production process, the ultrasonic knife will be run through by a sound wave and translated into a mechanic vibration – a noticeable vibration. It vibrates depending on the frequency 20,000, 30,000 or 35,000 times per second (20, 30 or more kHz), which results in a maximum surface friction between the product and the ultrasonic knife. In this way, pressure-free cutting of products is possible and the deformation is minimised.
