Reblochon cheese is a semi-soft, washed-rind and spread-ripened mountain cheese that originated in the heart of the Alaves Mountains in the Thônes region of Haute-Savoie, France. It is a lightly pressed raw cheese made from unpasteurized whole milk. The peel of Reblochon is delicate and soft, ranging from yellow to orange, and the tightly textured head is very smooth, soft and ivory. Farmhouse cheese discs mature for at least two weeks, during which time the cheese develops an edible light beige crust and a buttery dough.
