Light cream 90g
Sugar 20g
Step
1. First make the Basque cheese cake. Add sugar to the cream cheese softened at room temperature, and stir with an egg beater until smooth and free of particles.
2. Add egg liquid twice and stir until smooth.
3. Add corn starch and mix well. Add light cream, espresso and Baileys, and stir until the liquid is smooth. (In short, all the materials are mixed together and stirred until smooth!!)
4. Spread baking paper on the four inch cake mold, pour in the cake paste, keep it at 220 ℃ for 18-20 minutes, take it out and cool it thoroughly before use. It is normal for the Basque cheese cake to shake in the middle and cool back.
5. Make mascarpone cream layer, and mix mascarpone+sugar until smooth
6. Pour in light cream, and beat with an egg beater until a short sharp corner appears (hard)
7. Spread the mascarpone cream on the completely cooled Basque cheese cake, smooth the top, and refrigerate for more than five hours. Sift a layer of cocoa powder on the top before eating.
