This workstation achieves seamless connection between the baking pan and the cutting process. It is compatible with the industry-standard 60×40 baking pan and equipped with a precise conveying and positioning mechanism, enabling fully automated operation of the entire process, including automatic pan loading, alignment, locking, and unloading. The equipment features an intelligent sensing module that accurately identifies the pan position, product placement, and cake specifications, automatically calibrating workstation deviations without requiring manual alignment adjustments. The cutting process incorporates 20-40kHz high-frequency ultrasonic cutting technology. An ultrasonic generator converts electrical energy into high-frequency mechanical energy, which is then transmitted to the cutting blade via a transducer and amplitude transformer, enabling the blade to vibrate at high speed and micro-amplitude. The cutting process eliminates the need for mechanical pressure to compress ingredients; high-frequency vibration instantly separates the product, easily penetrating cream, fillings, and sponge cake layers. The cut is smooth and even, without crumbling, collapse, or cream adhesion and deformation, perfectly preserving the cake’s layered structure and appearance. Meanwhile, high-frequency vibration endows the blades with self-cleaning properties, making them less prone to residues of sugar and cream impurities, significantly reducing the risk of cross-contamination and meeting HACCP and GMP food production hygiene standards.
